Beer Pancakes with Longboat Chocolate Porter

I was craving waffles the other day,
but I had no iron to my dismay.
Them’s the breaks
So I made beer pancakes.

1 cup sifted flour
1/4 cup brown sugar
3/4 tsp baking powder
1/2 tsp salt
1 egg
2 tbsp butter, melted
1 cup of beer

1) Mix the dry ingredients together.
2) Add wet ingredients and mix together. Small lumps are okay.
3) Heat a pan/griddle/skillet to medium. Oil it up.
4) Pour about 1/4 cup of the batter per pancake. Cook until bubbles start appearing on the top. Flip and cook until both sides are brown.

These were the best, and ugliest, pancakes I’ve ever had.
